The Neversink General Store was invited to Bethel Woods – Catskill Cuisine 2023 to sample and demonstrate the following Brazilian Dish. The recipe:
SHRIMP BOBO
Ingredients
· 1 small onion, diced
· 3 garlic cloves
· 2 tomatoes, seeded and peeled
· 1 red pepper, diced
· 1 lb yucca/cassava
1 1/2lbs shrimp
· 2cans coconut milk
· 4 tbsp lemon juice
4 tbsp chopped cilantro or parsley
· Shrimp bouillon
Cooking Instructions
Cook yucca and mash, reserve
Sautee onions, garlic
Add tomato and shrimp bouillon, cook for 10 minutes
Add yucca and coconut milk
Lastly, add shrimp and cook until they are just pink. Salt and pepper to taste
